Spicy Lemongrass Mushroom Salad with Thai Rice Noodles (295g)

This cross between a salad and a stir-fry contains a medley of exotic mushrooms including king oyster, enoki, swiss brown and shitake tossed with lemongrass, mushroom stock and Thai rice noodles.  Add a garnish of seaweed and sesame seeds and this is a salad that is deeply umami (satisfying in flavour).
